If you want to use a tortilla and spread it with some salsa and a small sprinkling of cheese, place it in the oven at a really high temperature you’ll have the taste of a pizza with a fraction of the calories.

  • 1 tin tomatoes of a pack of fresh cherry tomatoes
  • 1 small red onion roughly chopped
  • 2 cloves garlic or garlic powder
  • 1 chilli red or green deseeded or chilli flakes or powder
  • 1 tsp paprika (optional)
  • 1 tsp sugar (optional taste it first it depends on the sweetness of the tomatoes)
  • 1 handful fresh herbs, parsley or coriander etc
  • 1 good squeeze of lemon or lime juice can be a squeeze lemon or lime not fresh!

No cooking involved it takes minutes to prepare and a little longer to chop up some veggies! Throw in the tomato into a blender.

Add the salt, pepper and paprika.

Next the lemon, garlic and red onion.

Add the herbs and blitz!
