So easy to make and so very delicious, have them for breakfast or for dinner, crispy buttery on the outside and soft in the middle!!
I’ve done plain rosti’s, I’ve used a truffle salt in my recipe! But you can add herbs, garlic and onion if you like, just grate them with the potato!
These are a good make ahead recipe, they can be simply heated up in the oven. Perfect for freezing too!

Ingredients
Makes 4 servings
- 2 large floury potatoes
- 1 large knob of butter
- Salt and pepper
Steps
Peel the potatoes.
Next grate them, into a clean tea towel.
Wrap it up. And squeeze out as much liquid as you can into a bowl or sink.
Unwrap and scatter on the tea towel breaking up clumps.
Season liberally.
Now divide into 4 equal portions, I used a half cup measure.
Heat a large frying pan to a medium high heat. Add the butter.
Now you don’t have to use a mould or a cookie cutter, you can spoon the mixture into the pan pressing down. I used a mould, press down the mixture into the mould! Repeat 4 times.
Gently fry the potatoes until golden underneath! It takes 4-5 minutes. Then flip them over.
Now fry them this side again for a similar amount of time.
When crisp on both sides and cooked all the way through they are ready to serve! Enjoy 😉
