This is a fantastic quick and delicious recipe!
Really tasty and a rich chipotle sauce!

In this photo I made my own tortillas with Mexican blue flour! I love to cook so much, but of course I realise that no one has the time to make their own tortillas! Use bought ones to make a speedy supper that’s so tasty! My husband said they tasted like ones he’d had in Wilmington, USA ๐Ÿ‡บ๐Ÿ‡ธ at a great Mexican restaurant there, so I’m happy ๐Ÿ˜ƒ

Because I’m featuring speedy suppers around the world, I’m using some cheats ingredients to give you a tasty alternative than buying a takeaway, so for example I’m using pre cooked chicken breasts! You could use any left over chicken in this recipe it’s up to you! I also used Kidney beans in a chilli sauce too! Another cheat but it helps to add extra flavour in minutes to this dish. I confess to being a food snob! What could be better, this recipe gets you sat down eating a delicious supper in 20 minutes, we all deserve a cheat ingredient once in a while!

๐ŸŒฟ๐ŸŒฑThe Vegan option is using a can of drained jack fruit and 2 chopped veggie sausage! You can use alpro soya to add some creaminess to the dish instead of cheese it will balance the rich sauce beautifully! The principal to the recipe is the same !

Simply serve with guacamole! and salad of your choice!

 4 servings

  • 2 chicken breasts I used pre cooked then diced them!
  • 100 grams spicy chorizo diced
  • 1 clove garlic finely chopped (I used smoked garlic but normal is fine too)
  • 1/2 tin tomatoes (I used piccolo)
  • 1/2 tin kidney beans (I used ones already in a chilli sauce)
  • 1 small onion or shallot finely diced
  • 1 tablespoon cooking oil, sunflower or light olive oil
  • 1 heaped tsp of chipotle paste
  • Handful fresh coriander chopped
  • 200 grams cheese up to you which one you want I’m using cheddar
  • 8 small flour tortillas
  • 2 tablespoons oil
  • (1 tbsp or the frying pan and 1 tbsp for the chipotle mixture)
  • Salt and pepper to taste (I used smoked salt)

In a sauce pan put in the oil, heat it and add the onion and garlic, stir it and let it soften.

Next add the chorizo and then the tomatoes give it a good stir.

Add the Kidney beans and chipotle paste, then the chicken give it a good stir let it simmer well!

Whilst it is simmering down chop up the coriander and grate the cheese! If you want a further cheat use pre grated cheese it will save you time!

After 5 minutes the sauce should be nicely thickened! add salt and pepper to taste. Take a tablespoon of the mixture and spread over half of tortillas! Not too thick don’t over load it. Then sprinkle cheese! If doing the vegan option don’t add the soya until you are eating it.

In a frying pan put a tablespoon of oil in it heat it up. Fold the over half of the tortilla over the mixture! Using a spatula add to the pan! Fry it on one side for a minute until it’s toasted then carefully flip it over! You can keep the made tortillas in a warm oven whilst you make the rest.
